Mama Chang

Chef/restaurateur Peter Chang’s ever-growing collection of Chinese restaurants has turned scallion bubble pancakes and Sichuan cumin lamb into DC-area staples. Mama Chang, an ode to the female cooks of Chang’s family, is one of our favorites. Dry-fried cauliflower seems to be on every table in the light-filled, warm-wood dining room, but lychee pepper chicken is just as much a standout for its sweet-tangy glaze. Order at least one of the seasonal specials, especially the Guanzhong hand-pulled noodles with garlic, chilies, and a vinegary sauce.
