At this improbable Bulgarian/Mexican/Japanese curiosity disguised as an ordinary slick Union Market restaurant, a number of the dishes—such as seaweed mole with potato miso and chicken skin—must be tasted to be believed. Pilates-studio owners Iva and Alex Gotzev, originally from Bulgaria, tapped the talented Mexico City chef Josa Maldonado to create an idiosyncratic hyper-seasonal menu with such highlights as a dry-aged rib-eye blue-corn taco and banitsa, a super-flaky feta pastry.
